Brewmaster, Kim Kowalski began his brewing career as an assistant brewer in Lansing, MI, at the Blue Coyote. After several years of brewing his own brews and lots of experimentation, Kowalski assisted the Blue Coyote head brewer for over a year before taking over the position. After a few years as the Blue Coyote head brewer, Kowalski managed the bottling line for the Michigan Brewing Company. While working for Michigan Brewing Company, Kowalski also gained brewing experience in two other local breweries; Harpers and Lansing Brewing Company. Rochester Scotch Ale
The Distinctive profile of Scotch ale is a reflection of the environment where it was developed. Scotland’s climate is not very conductive to growing hops, and, as a result, traditional Scotch ales tend to lack a strong hoppy flavor, because hops would have been scared historically. Instead, Scotch ale has a very rich, smoky flavor from the smoked barley which is commonly included in the brewing process, and it also has a strong malted tone, which can cause the beer to have a slightly sweet, peaty flavor which many people describe as “earthly.”
